Quinoa Salad

This is one of those recipes that is honestly just as good (if not better) as leftovers. I LOVE those kinds of meals. Especially because it doesn’t even need to be heated up! Also, it can be modified so many different ways. Since quinoa is so protein-rich, it’s the perfect addition to your salad.

Ingredients for the salad:

  • 1 cup quinoa, cooked
  • 2 cups spinach
  • red bell pepper, diced
  • grape tomatoes, halved
  • zucchini, sliced and cut in quarters
  • 1/4 cup feta cheese

For the dressing:

  • 3 tablespoons lemon juice
  • 2 tablespoons red wine vinegar
  • 1/2 tablespoon olive oil
  • Pinch of oregano


To change it up a bit, I added black beans and grilled chicken to the leftovers.
