I got this recipe from skinnytaste so I’m not even going to try to take credit for the genius in this meal! I’ve eaten stuffed bell peppers with ground beef, meatloaf, and ground turkey, but this recipe tops them all.
For the meat mixture, ground turkey is combined with brown rice, seasoned with cumin, garlic, cilantro, and onion, and mixed in with some tomato sauce and chicken broth. And it is DELICIOUS. In fact, it’s even perfect for leftovers and can be added onto a tostada, topped on a salad, or just eaten on it’s own.
To complete my dinner, I added a side of black beans topped with some chopped onions and tomatoes, and some homemade guacamole.
