Healthy Blueberry Pancakes

I’ve never really been a pancake or waffle girl – they never left me full enough for long enough, and I always thought of them as a fattening breakfast, soaked in butter and doused in maple syrup. This healthy pancake recipe uses oats, yogurt, egg, and banana to create a protein-filled, sweet, pancake that has a taste similar to banana-bread. Since I normally eat scrambled eggs for breakfast, it’s nice to break the routine and still get in some good protein with these pancakes.
Ingredients:
  • 1/2 cupΒ old-fashioned oats
  • 1/2 teaspoon baking powder
  • 1 container Siggi’s blueberry yogurt
  • 1/2 medium banana
  • 1 egg
  • 1/2 teaspoon vanilla
  • 1/3 cupΒ fresh blueberries

It’s such an easy recipe, too. Just combineΒ all ingredients – except blueberries – in a blender and blend until smooth. Fold in blueberries into mixture. Coat a skillet with cooking spray and head over medium heat. Drop pancake batter onto the skillet and cook until bubbles appear on top. Flip them and cook until golden brown. Top them with a little drizzle of honey or some nut butter.
